Ingredients

  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)
  • ½ cup shredded mozzarella or cheddar cheese
  • ½ cup cooked ham, bacon, or pepperoni (diced)
  • 2 tbsp cream cheese (optional, for creaminess)
  • 1 tbsp fresh parsley or chives (chopped)
  • ½ tsp garlic powder
  • ½ tsp paprika (optional, for color)
  • Salt & black pepper, to taste

Instructions

Step 1: Prep the Puff Pastry

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out puff pastry lightly on a floured surface to smooth the edges.
  • Cut into 2-inch squares using a sharp knife or pizza cutter.

Step 2: Fill and Fold

  • In a bowl, mix cheese, diced ham (or bacon/pepperoni), cream cheese, parsley, garlic powder, paprika, salt, and pepper.
  • Place 1 teaspoon of filling in the center of each pastry square.
  • Fold into triangles or pinch the corners together to make little parcels. Seal edges with a fork.

Step 3: Egg Wash & Bake

  • Beat the egg and brush lightly over the tops for a golden finish.
  • Arrange bites on the prepared baking sheet.
  • Bake for 15–18 minutes, or until puffed and golden brown.

Step 4: Serve Warm

  • Let cool slightly, then serve warm with marinara sauce, ranch, or honey mustard dip.

Serving Ideas

  • Perfect for holiday parties, appetizer platters, or a snack with cocktails.
  • Swap fillings with spinach & feta, caramelized onions, or sun-dried tomatoes for a gourmet twist.

Pro Tips

  • Keep puff pastry cold before baking—it helps achieve the perfect flaky layers.
  • Make ahead: assemble bites, freeze on a tray, then bake straight from frozen (add 3–4 minutes baking time).
  • Use mini muffin tins for neater, bakery-style bites.
